ATTIS D.O. RIAS BAIXAS

From the Val do Salnes, in the heart of the Rias Baixas region, the brothers Robustiano and Baldomero Fariña create these amazing wines. Their philosophy is simple but not easy to accomplish for everyone: use local varieties, treating each vineyard independently trying to bring out the very best of each small piece of land. Authentic, Artisanal, and Atlantic are the terms that best describe this incredible producer, absolutely devoted to Albariño and the other not so well known native varieties in the Galician coast. They use wild, native yeasts in the wine's fermentation.

Vineyard: Traditional pergola with 800 vines /ha.
Soils of granitic Entisoles of Sandy-clay character.
Dominant orientation in the western part, looking to the Atlantic Ocean.

Winemaking: Hand harvest picking in boxes of 15 kg perforated.
Selection of grapes.
Complete destemming and compress air press.
Setting the juice with cold temperature.
Native yeasts fermentation with control of
temperature (12-15ºC).
No malolactic fermentation.
Wine Tasting: Intense yellow color with a Green rim. Clean and brilliant.
It shows a bouquet of intense fresh white fruit with hints of citric fruit coming through.
Luscious and fresh. It would go perfectly with shellfish and fish.

Pedral, Souson and Espadeiro

Vineyard: Traditional pergolas with 800 vines/ha.
Soils of granitic Entisoles of sandy-clayey character.
Dominant orientation in the south-western part.
Altitud of 100m.
Yield: 4000 Kg/ha.

Winemaking: Hand harvested with manual selection of grapes.
Complete de-stemming.
Native yeasts fermentation in open 500 L open barrels.
Total maceration of 15 days with 2 “pigeages”/day.
Spontaneous malolactic fermentation.
Ageing 12 months in French oak vat.
Fining with eggs and sea water.
Wine Tasting: Deep purple and brilliant.
A nose rich in small red fruits (raspberries), spices (pepper), flowers (violet), with touches of mineral.
Fresh and luscious, very round mouth with a dense structure extended by a keen acidity.
An attractive wine, on the colour and the nose, with a luscious mouth. A red wine to enjoy in every moment.

Vineyard: Traditional pergola with 800 strains/ha.
Granitic entisol soils with a sandy-clay character.
Dominant orientation to the South-West.
Elevation of 100 m.
Yield of 4,000 Kg/ha.

Winemaking: Hand harvest in 15 kg perforated boxes.
Sorting table at the entrance of the winery.
Direct pressing with stem.
Native yeasts fermentation in stainless steel.
Spontaneous malo-lactic fermentation.
Filtering.

Wine Tasting: Intense and bright salmon color.
Rich nose of small red berries (raspberry and strawberry), hint of blossom (orange and acacia) with mineral notes.
On the palate, it stands out for its freshness and sweet touch. Round and unctuous attack where the aromas of the nose are found again. Lingering finish with a delicious acidity.
An attractive wine visually and aromatically, with a sweet and fresh mid palate. A rosé to enjoy at any time.

Vineyard: Traditional Pergolas with 800 plants/ha.
Selection of vineyards between 35 and 40 years old.
Soils of granitic Entisoles of sandy – clayey character.
Yield: 6.000 Kg/ha.

Winemaking: Hand harvest picking in boxes of 15 Kg perforated.
Selection of grapes.
Complete de-stemming
Native yeasts fermentation in stainless Steel.
Pellicular maceration of 15 days with 2 “pigeages”/ day.
Malolactic spontaneous fermentation.
Ageing on lees for 6 months with “batonnage”.

Wine Tasting: A wine with a original and typical nose (orange peel) and with personality in the mouth. A wine to discover new sensations.
