Ramiro Carvajo is a very famous and respected winemaker in Spain that has worked for some of the most famous wineries in Ribera del Duero and Toro. With his friend and vineyard owner Florentino Ferrin, they started this dream they call QUINTAESENCIA, with the idea of making the best wines possible, no conditions, no bosses, no chains, no money… But full of energy and passion.
The wines are undoubtedly some of the best wines in all the old region of Toro.
Simplicity can be admirable when great vines, soils, climate and passion align. Florencio and Ramiro know it and their vines must know it too, because they make incredible wines year after year. And at Casa Ventura, we are the lucky ones to introduce these gems to you!
100% TINTA DE TORO (TEMPRANILLO)
This wine is made from Tinta de Toro grape from different vineyards aged 31 to 48. Soils have been selected in order to nurture its Toro character in keeping with fruits and alcohol content. Chalky, loamy-sandy soils, exploring exposure and orientation. From Venialbo to Toro, through Morales and La Boveda. A warm winter that gave way to a dry summer. Very good grape quality with a very pronounced average decrease in yield, initially due to the Filomena storm (in spring) that caused frost and some hail, and later due to the rains and some hailstorms in late August and early September. Even so, these conditions helped to increase the quality of the grape and yielded an optimal ripeness.
15 Days alcoholic fermentation with native yeasts. Malolactic fermentation in second year French oak barrels for two months.
Aged for 2 months in new French oak barrels and 3 more months in second year barrels.
100% VERDEJO
This wine is made with the variety of grape Verdejo, from a controlled vineyard of 29 years of age, in formation of trellis, located in the municipality of Rueda (Valladolid). At 761 meters of altitude.

100% TINTA DE TORO (TEMPRANILLO)
SOFROS is the iconic wine of the winery, the first one they ever made form an 90+ year old vineyard. Made with tinta de toro grape from very gently cared vineyards of 5 hectares, located in a village called Morales de Toro in the territorial region of Zamora, at 705 meters of altitude. 2015, a year with slightly higher temperatures than expected. After a winter with milder low temperatures, spring was characterized by stormy weather and high temperatures that led to early budding. An early summer heat wave and more storms gave way to an autumn with moderate temperatures that allowed the small grapes to mature adequately.
